Delicious! Before I placed it in the crockpot, I quickly seared it on all sides in an iron skillet. I added no additional ingredients - no salt, no pepper, no liquids of any kind - nothing. Just plain meat. What you see are the meat's own juices that have been created by the cooking process. And yes, there is some melted fat atop it. Fat adds flavor - as do bones - which is but one reason why this cut of beef tastes so well, and is so highly regarded.

I used the recipe from "I Know How to Cook." The only modification was to add carrots, because we like them. I think the Julia Child version is much more refined, but it also takes more time, energy and effort. Dispite it's ease (or maybe because of it?), this version is my new favorite. It's quite good. I also splurged on a better bottle of wine to cook the dish, so that probably made a big difference too.
